Sweet clover (mélilot) is a herbaceous plant from the Fabaceae family, recognizable by its clusters of small yellow or white flowers with a soft, slightly vanilla-like fragrance. Well known as a melliferous plant for bees, sweet clover is also an edible flower.

In cooking, its flowers and young leaves can be used to flavor both sweet and savory dishes. Their taste is reminiscent of vanilla, freshly cut hay, and almond, making them an original ingredient in desserts, herbal teas, or even some cheeses. Traditionally, it was used to perfume bread or liqueurs.

Sweet clover also has a place in herbal medicine: it is said to support digestion, have calming effects, and promote circulation. However, it should be consumed with care, since if poorly dried or eaten in large amounts, it can become toxic due to its coumarin content.
